This coffee-making method entails a brief fermentation period lasting 24 hours in mucilage for each participating producer. Following this, the coffee is washed and subsequently transferred to a drying patio. Here, all the coffee is collectively dried and homogenized to ensure a uniform flavor profile. Post-drying, the coffee undergoes a stabilization period ranging from 15 to 25 days before it is milled.
