Nariño Project - Colombia

This coffee comes from an amazing group coffee farmers from the the Nariño department, in the region of Sandona and Chachauy! For this project, we build an easy 24 hours fermentation protocol, in which all the farmers were involved with their coffees in their own farms. After the coffee has gone through the fermentation, it´s taken down to a solar dryer where all the coffees are dried together to accomplish a more homogeneous profile and control the moisture levels of all the lots, which are then stabilized in grain pro bags for 125 days before being milled.

HISTORY:

The story of this fantastic coffee starts with a group of farmers from Nariño! These farmers, hailing from the charming regions of Sandona and Chachauy, joined forces to create something truly special. Their secret sauce? A simple 24-hour fermentation process that each farmer carries out on their own turf. After the magic of fermentation, they gather their beans and head to the solar dryer, where all the coffees mingle and dry together under the sun. It's like a coffee party in there! This communal drying session ensures a consistent and top-notch profile for each batch. And just when you thought it couldn't get any cooler, they let those beans chill in grain pro bags for a whopping 125 days before milling. Now that's what we call dedication to perfection!

PROCESS DESCRIPTION:

The process begins with a 24-hour mucilage fermentation, followed by a thorough wash to eliminate any residue. Next, on the drying patio, the beans bask in the sun, forging a consistent profile through mingling and exchanging flavors. After a serene stabilization period, they venture to the mill, polished and primed for your cup.

Brayan Alvear

Brayan Alvear, a 19-year-old coffee grower from Acevedo, Huila, Colombia, has turned a lifelong passion for coffee cultivation into a dream career. This year, he led a project with over 60 local coffee growers, including his family, to collect and sell coffee cherries at premium prices, showcasing their dedication. Partnering with Forest and the Ancla processing station, Brayan helped develop unique coffee profiles through innovative fruit fermentation techniques, making him one of the youngest producers to feature in a Forest release.

Ciro Dias Pereira

Ciro Dias Pereira manages Capim Seco farm, having taken over from his brother Rafael, who shifted focus to horses. Ciro, who also co-manages Fazenda Irmãs Pereira with his brother Luiz Paulo of Carmo Coffees, upholds the family tradition of high-quality coffee production. Capim Seco's beans are processed at Fazenda Irmãs Pereira using advanced techniques. Ciro’s passion for coffee is driven by his family's legacy and the recognition of their high-quality products.
